This summer were are participating in a CSA at a local farm – Snead’s Farm. Between that and our own garden we are overflowing with zucchini! I was trying to find some other ways to use it and came upon this recipe for Chocolate Zucchini Bread. Chocolate??? It has to be good, right?
And I love that this recipe substitutes applesauce for much of the oil. The only change I made was substituting all-purpose flour for the cake flour and adding an additional 1/2 tsp of baking powder. YUM!

Here are a few more from the workshop last weekend. As I mentioned before, the session was styled by Shannon and the adorable clothes and accessories were from Lisa’s Mini Mad Hattery, The Measure, and Knuckleheads! I’m thinking I might do a little shopping soon!

Whew – things have been busy around here lately! You wouldn’t know it by the blog posts though. Holy moly! Has it really been over a month since my last post? Gees! Anyway…last weekend I had the opportunity to attend a workshop with Shannon Sewell. I love her work – it is so creative, fun, and quirky! For part of the day, we were able to participate in a shoot styled by Shannon. (More on the cute clothes and accessories later.) I’ve had so much fun today playing and editing images from that shoot that my eyeballs are crossing. LOL! So here’s just one for now. I think it’s definitely one of my favorites from the day. I played with some different processing too. What do you think? More later…

I was shopping last week at Wegmans (LOVE that place) and saw these beautiful Meyer lemons. They reminded me of summer and warmer weather. Considering we just had a snow day that week, I couldn’t resist something so bright and cheery to warm up my day! I came home and after some researching came up with a lemon muffin recipe. These aren’t too sweet and have a nice subtle lemon flavor. (For more lemony goodness, you could add a touch of lemon extract.) I froze most of the batch and have been enjoying then as a great grab and go breakfast or snack. And they only have about 100 calories per muffin. Not bad!
Meyer Lemon Muffins
(makes about 20 muffins)
- 1 cup cake flour
- 1 cup whole wheat flour
- 2 tsp baking soda
- 1 egg
- 1/2 cup honey
- 1/4 cup canola oil
- 1/2 cup fat-free milk
- 6 tsp Meyer lemon juice
- 4 tbsp fresh Meyer lemon zest (about 3 medium lemons)
- 1/2 cup unsweetened applesauce
Preheat oven to 350 degrees. Line muffin tins with paper baking cups. In medium bowl, whisk together flour and baking soda. In large bowl, whisk together the remaining ingredients. Add the flour to the wet ingredients a little as a time, whisking as you go. Divide batter among muffins cups filling each about 1/2 full. Bake for 20 minutes or until a toothpick poked in the center of a muffin comes out clean. Enjoy!

Along with taking photographs, it’s probably no surprise that I love scrapbooking. I have been a “scrapbooker” for almost 12 years now (well probably longer than that - I remember making scrapbooks when I was in high school.) Despite the movement to digital scrapbooking, I still enjoy the “old school” cut and paste scrapbooking. I love getting my hands on those photographs and designing each page. I LOVE when my kids get out their scrapbooks to enjoy them. We have a good laugh and remember many of the fun times we’ve had. I hope they feel the love that also fills each one of those books.
I was going through my family pictures recently to get some ready to print and scrapbook. I can across this one that I took last fall. I love her crooked half smile and the incredible golden light we had that afternoon. {Sigh} She is growing up.

What could be better on a cold morning than a bowl of warm, creamy oatmeal? How about some pumpkin oatmeal?! I was a big fan of Aarti Sequeira on the show, The Next Food Network Star, and I really enjoy her new show, Aarti Party. I came across an episode on my DVR recently that included this wonderful pumpkin oatmeal recipe and decided to give it a try. I made a few tweaks like using 1% milk instead of the almond milk/cream and using a little stevia and agave nectar instead of honey. I also omitted the raisins and pepitas. (I don’t like cooked raisins and didn’t have any pepitas on hand.) All I can say it YUM!

I know, I know…we’re over halfway through January now. I guess I just took an extended holiday vacation!
The blog has been a little quiet lately and it will probably be that way for another month or so until we get closer to spring. I’ve been working on the boring stuff…cleaning out my office, taxes, etc… At least I’ll be organized and recharged when the spring season gets close. I’m also working on some fun stuff (which may include some giveaways
) so be sure to check in every once in a while! And I’ll leave you with some images from a senior session I did last fall. I loved how we captured his interests and personality!
